Ground Pork Tacos

 
  • 1 pound ground pork

  • ½ cup shredded sweet potato

  • ½ cup shredded zucchini

  • ½ cup shredded squash

  • 8 ounces of crushed tomato

  • ½ cup black beans

  • ¼ cup water

  • S&P to taste

  • 2 tablespoons of cumin

  • Corn or flour tortillas

  • Nonstick skillet

In a nonstick skillet at a medium high temperature add the ground pork. Bust the pork up in the skillet as it’s sautéing. Once you get the pork busted up in the consistency you like add ALL the veggies minus the crushed tomatoes. Allow the pork and shredded veggies to sauté for about 3 minutes. At this time add the crushed tomato and water and all your seasonings. Stir and combine ingredients well. Adjust the heat to a low simmer cover the skillet and let simmer for about 5 minutes, stirring at the ½ point. Gather your favorite ingredients to place on your ground pork tacos!
