Chef Jeff’s Bomb Candy Bacon

 
  • 1 pound of your favorite bacon (Chef Jeff likes to use Thick Bacon and Blue & Gold Bacon is his favorite)

  • ½ cup brown sugar

  • Ground chipotle seasoning or course black pepper to taste (to taste is how much the person preparing the recipe chooses)

  • Sheet pan

  • Aluminum foil

  • Pan spray

  • Oven set a 375 degrees

On the sheet pan add a sheet of foil covering the sheet pan cooking surface. Spray the foil lightly with cooking spray.  Lay the bacon out on the sheet pan.  Place the bacon in an oven at 375 degrees. You can use convection or non-convection, only difference is the time of cooking. 

Cook the bacon for 12 minutes. Pull the bacon out of oven and drain all the pork fat in a mason jar or your favorite pork fat collector. At this point you want to equally sprinkle the brown sugar all over the bacon.  After the brown bacon is covered with brown sugar, lightly sprinkle chipotle seasoning over the bacon and brown sugar.  How hot you want the bacon to be is how much chipotle you add. If you’re using course black pepper then you can go a lot more generous without the bacon getting to hot. Place the bacon back into the oven and cook for 5 more minutes or until the bacon is cooked to your preference. 

Let the bacon cool down before handling.  The melted sugar is like Lava and needs to cool down and setup before you trying to eat or handle without tools.

  • Adding to your bake potato

  • Adding to your favorite soups

  • Making a BLT sandwich

  • Adding to a nice salad

  • Wrapping figs with blue cheese

  • Wrapping your steak

  • Wrapping pork loins

  • Serving with your favorite breakfast
